RestAura Experience 2021 - Chef’s Jamming

During RestAura Experience 2021, we had the great joy and honour to launch and host a co-creative culinary concept called Chef’s Jamming. This concept was led by chef Ricardo Muñoz Zurita in symbiosis with chef Maximiliano Sola, chef Willy Sal García, chef Isais Perez, chef Misael De Jesús and chef Jonatan.

Ricardo Muñoz Zurita is a Chef, teacher, lecturer, researcher and today is considered to be the highest authority in traditional Mexican cuisine by specialized critics. He is the most prolific and important writer in his field. He was the chef who was most involved in the activist movement pushing to make Mexican cuisine part of the Intangible Cultural Heritage of Humanity.

The concept took place during dinner time, where accompanied by live ancestral music, exceptional Chefs each with their own unique styles and talents, co-created in a two day experience serving 18 & 22-course meals. Some of the dishes presented included

The focus of the concept was the use of local, sustainably sourced, organic, indigenous ingredients, prepared and cooked according to ancestral traditions, as well as the previously mentioned co-creative process.

We are very glad to have been able to host and experience Chefs Jamming during RestAura Experience 2021, and we excitedly look forward to welcome our new chef Jose Aristides Ruiz Juarez. He has previously collaborated with Ricardo Muñoz organizing different festivals with the goal of "rescuing" lost ancestral flavors with other famous international chefs. It is a real treat for us to keep this collaboration alive and we are delighted for them to be joining our soul family. We can't wait to see you in Ikal's restaurant, MAIA.
